Finely grind sugar and tea in a spice mill. Purée 1 cup fresh blackberries, vinegar, and Earl Grey sugar in a food processor until smooth. Strain through a fine-mesh sieve into a small bowl, pressing on solids; discard solids.
Step 2
Arrange pears on plates; top with remaining 2 cups blackberries. Spoon blackberry sauce over top.
