This is a deliciously fresh side dish that really enhances the flavour of purple sprouting broccoli. Our method of frying the broccoli before adding water to help cook it through brings out a slightly nutty flavour while retaining a bite. This would be delicious served alongside a piece of fish or chicken. You could increase the amount of chilli you use if you prefer more heat.

Purple sprouting broccoli is at its best from February through to April, but it you can’t get hold of it, Tenderstem broccoli will work just as well.
Ingredients
- 1 Tbsp.olive oil
- 400 gpurple sprouting broccoli
- 1/2red chilli, finely chopped
- 2garlic cloves, finely sliced
- Zest and juice 1 lemon

- Step 1Heat the olive oil in a large frying pan (or wok) over medium-high heat. Once hot, add the broccoli and stir fry until turning golden brown, 3-4 minutes.
- Step 2Add the chili, garlic, and lemon zest and stir fry for 1 minute, making sure the garlic doesn’t burn. Season with salt and pepper and add 100ml water, cover with a lid or some foil, and steam fry the broccoli until just tender, 3-4 minutes more.
- Step 3Once cooked to your liking, transfer to a serving plate and pour over the lemon juice.
- Step 4Serve immediately.
