You could make basic burgers for your cookout, but where’s the fun in that? When we’re looking for a standout recipe for our BBQ, we turn to these paella-inspired party packs. Filled with Spanish rice, chicken thighs, chorizo, frozen peas, and roasted red peppers, these packs take inspiration (with many creative liberties) from one of our favorite centerpiece meals—paella. If you’re craving the classic meal but need something more hands-off, then these foil packs are here for you.
Like most of our foil pack recipes, these are extremely versatile. Switch up the protein by adding chicken breasts, shrimp, or plant-based chorizo. Add in some tomatoes, mushrooms, or summer squash if you want to amp up the veggies. Once you’ve created your perfect party packs, top with fresh herbs, and get ready for the ultimate cookout.

Ingredients
- 1 c.Spanish rice, divided
- 1 c.chicken broth, divided
- 1/4 c.white wine, divided
- 4boneless, skinless chicken thighs
- Kosher salt
- 4 oz.thinly sliced chorizo, cured
- 1/4 c.frozen peas
- 1/2 c.thinly sliced roasted red pepper
Directions

- Step 1Preheat grill over medium-high heat.
- Step 2Cut 8 sheets of foil about 12-in long. To form each packet, place 2 sheets of foil on top of one another and fold the edges along 3 sides of the rectangle to form a barrier. Repeat to form 4 packets.
- Step 3To each packet, add 1/4 c. rice, 1/4 chicken broth, 1 tbsp wine. Carefully toss the rice. Add a chicken thigh to each packet over the rice and season with salt, then divide chorizo, peas and red pepper between the 4 packets.
- Step 4Fold the foil packets crosswise over the paella mixture to completely cover the food. Fold the edges to seal closed.
- Step 5Place packets on hot grill and cook until the chicken is cooked through and the rice is tender, about 25 minutes, flipping once halfway through. (Alternatively, you can bake in oven at 425 degrees F for about 20-25 minutes.)
