Cajun-Stuffed Chicken

Stuffed with peppers and cheese, this spiced chicken is packed with flavor, but ready to be served in under an hour. If you’re looking for a cheap and easy dinner you can rely on, then this stuffed chicken recipe should be a new go-to in your chicken recipe repertoire.

Tip: While you can totally use store-bought, we love to use our homemade Cajun seasoning. Make it for this recipe, then store it to use in countless weeknight dinners (we’re looking at you, Cajun shrimp). Feel free to get creative with the fillings—just make sure not to over-stuff your chicken.

Ingredients

  • 2 Tbsp.extra-virgin olive oil
  • 1 c.medium onion, diced
  • 1 c.red and green bell pepper, diced
  • Kosher salt
  • Freshly ground black pepper
  • 4boneless, skinless chicken breasts
  • 1 c.shredded cheddar
  • 2 Tbsp.Cajun seasoning

Directions

    1. Step 1Preheat oven to 350°. In a large ovenproof skillet over medium heat, heat oil. Add onions and peppers and cook until soft, 5 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
    2. Step 2With a sharp paring knife, create a pocket in each chicken breast. Stuff each with vegetable mixture, then top with cheddar. Season chicken all over with Cajun seasoning, salt, and pepper.
    3. Step 3Add chicken to skillet and bake until cooked through, about 25 minutes.
