Tofu Lettuce Wraps with Peanut Butter Dip

This is a quick and easy recipe. You will need to press the tofu first (using a tofu press or plates) for around 20 minutes during which time you can prep the rest of the ingredients.

The tofu is then grated using the coarse side of a box grater and fried with oil and seasonings until golden brown. Once cooked, the grated tofu has the look and consistency of shredded chicken or pork. All that is left to do is to build the tofu lettuce wraps and serve them with the peanut butter dip.

FOR THE WRAPS

  • extra-firm tofu
  • vegetable oil
  • small onion
  • garlic cloves
  • ginger
  • ground cumin
  • ground coriander
  • toasted sesame oil
  • soy sauce
  • sriracha sauce
  • salt
  • carrot
  • cucumber
  • radishes
  • spring onions
  • gem lettuce

PEANUT BUTTER DIP:

  • smooth peanut butter
  • fresh lime juice
  • ginger
  • rice or cider vinegar
  • soy sauce
  • light brown sugar
  • garlic
  • vegetable oil
  • sriracha sauce
  • water

TO SERVE:

  • mint sprigs
  • coriander sprigs

Step 1: Press the tofu

Press the tofu for at least 20 minutes to extract as much water as possible. You can use a tofu press or wrap the tofu slab in a clean towel and press it between 2 plates by securely placing something heavy on top.

Step 2: Make the peanut butter dip

To make the peanut butter dip, mix all of its ingredients together and set aside. You can thin it with a little bit of water to your desired consistency if needed. Set aside.

Step 3: Prepare the vegetables

To prepare the vegetables, grate the carrots on the coarse side of a box grater, cut the cucumber into small dice, slice the radishes and spring onion, and separate the lettuce leaves from the core. Place each vegetable in a separate bowl. Set aside.

Step 4: Grate the tofu

Using the coarse side of a box grater, grate the pressed tofu.

Step 5: Fry the tofu

Heat 1 tablespoon of vegetable oil over medium heat in a large frying pan. Add the onion and cook until soft, about 5 minutes. Add the garlic and ginger and cook for 30 seconds.

Add the grated tofu, cumin, coriander, and toasted sesame oil. Stirring constantly, fry the tofu until golden all over. Add the soy sauce, sriracha, and season to taste with salt.

Step 6: Build the tofu lettuce wraps

To build the lettuce wraps, place lettuce leaves on a serving dish. Top each one with carrot, tofu, cucumber, radish, and spring onion. Top the wraps with fresh mint and coriander and serve with the peanut butter dip on the side.
