Citrus Salad with Hazelnut-Dijon Dressing

Tart, juicy citrus gets a serious savory boost from a simple but rich-tasting vinaigrette.

Ingredients

  • c. orange juice
  • 1/4 c. hazelnut oil
  • 1 tbsp. Dijon mustard
  • 1/2 tsp. salt
  • 2 grapefruit
  • 2 Valencia or navel oranges
  • 2 clementines
  • 1 c. pea shoots
  • 3 sprig mint
  • 2 tbsp. shaved pecorino Romano
  • Freshly ground pepper

Directions

    1. Step 1

      In a small bowl, whisk juice, oil, mustard, and salt to combine. Set dressing aside.

    2. Step 2Slice grapefruit, oranges, and clementines into 1/8-inch-thick rounds. Divide citrus among 4 plates and top each serving with one-quarter of both the pea shoots and the mint leaves. Drizzle with dressing, and garnish with cheese and pepper to taste.
