Tart, juicy citrus gets a serious savory boost from a simple but rich-tasting vinaigrette.
Ingredients
- c. orange juice
- 1/4 c. hazelnut oil
- 1 tbsp. Dijon mustard
- 1/2 tsp. salt
- 2 grapefruit
- 2 Valencia or navel oranges
- 2 clementines
- 1 c. pea shoots
- 3 sprig mint
- 2 tbsp. shaved pecorino Romano
- Freshly ground pepper

In a small bowl, whisk juice, oil, mustard, and salt to combine. Set dressing aside.
- Step 2Slice grapefruit, oranges, and clementines into 1/8-inch-thick rounds. Divide citrus among 4 plates and top each serving with one-quarter of both the pea shoots and the mint leaves. Drizzle with dressing, and garnish with cheese and pepper to taste.
