Pasta Primavera

Ingredients:

  • 200g penne pasta
  • 1 tbsp olive oil
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup peas (fresh or frozen)
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Grated Parmesan cheese, for serving
  • Salt and pepper, to taste

Instructions:

  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the garlic and cook for 1 minute until fragrant.
  3. Add the zucchini, bell pepper, cherry tomatoes, and peas to the pan. Sauté for 5-7 minutes, until the vegetables are tender.
  4. Add the cooked pasta to the pan and toss everything together. Season with salt and pepper.
  5. Remove from heat and stir in the fresh basil.
  6. Serve with grated Parmesan cheese and enjoy!
