Ingredients:
- 200g penne pasta
- 1 tbsp olive oil
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup peas (fresh or frozen)
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Grated Parmesan cheese, for serving
- Salt and pepper, to taste
Instructions:
- Cook the penne pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the garlic and cook for 1 minute until fragrant.
- Add the zucchini, bell pepper, cherry tomatoes, and peas to the pan. Sauté for 5-7 minutes, until the vegetables are tender.
- Add the cooked pasta to the pan and toss everything together. Season with salt and pepper.
- Remove from heat and stir in the fresh basil.
- Serve with grated Parmesan cheese and enjoy!
