Classic Spaghetti Aglio e Olio

Ingredients:

  • 200g spaghetti
  • 4 cloves garlic, thinly sliced
  • 1/4 cup olive oil
  • 1 tsp red pepper flakes (optional)
  • Fresh parsley, chopped
  • Salt, to taste
  • Parmesan cheese (optional)

Instructions:

  1. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic slices and sauté until golden brown (about 2-3 minutes). Be careful not to burn the garlic.
  3. Add the red pepper flakes, if using, and cook for another 30 seconds.
  4. Add the drained spaghetti to the skillet, tossing it to coat in the garlic oil. Add a splash of the reserved pasta water to help combine everything.
  5. Season with salt, and sprinkle with fresh parsley and Parmesan cheese if desired. Serve immediately.
