Classic Spaghetti Aglio e Olio
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 1/4 cup olive oil
- 1 tsp red pepper flakes (optional)
- Fresh parsley, chopped
- Salt, to taste
- Parmesan cheese (optional)
Instructions:
- Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the garlic slices and sauté until golden brown (about 2-3 minutes). Be careful not to burn the garlic.
- Add the red pepper flakes, if using, and cook for another 30 seconds.
- Add the drained spaghetti to the skillet, tossing it to coat in the garlic oil. Add a splash of the reserved pasta water to help combine everything.
- Season with salt, and sprinkle with fresh parsley and Parmesan cheese if desired. Serve immediately.
