This healing Ginger Garlic Soup is one of my favorite meals to cook on cold winter evenings. It’s warm, comforting, and packed full of delicious flavors. Plus, it’s incredibly easy to prepare and completely vegetarian!

Ingredients
- 3 oz No Yolks Broad Noodles or substitute a vegan noodle
- 32 oz vegetable broth
- 6 cloves garlic peeled and minced
- 1 piece fresh ginger 2″ piece, peeled and minced
- 1 tsp salt
- ¼ tsp black pepper
- 1 tsp olive oil
Instructions

Heat olive oil over medium heat in a large soup pot.

Add ginger and garlic, and cook for 2-3 minutes until fragrant.

Add vegetable broth, salt, and pepper. Bring to a boil.

Add No Yolks Noodles and cook for ten minutes.

Remove from heat, and serve!
