Effortless madeleine ‘baba’

This is a cheat on a rum baba that’s very simple – use your favourite rum to make it more special

What is effortless?

Easy on the eye and simple to make, thanks to shop-bought ingredients and no fiddly techniques. These recipes can be made ahead or require 30 minutes or fewer of prep – they’re go-to ideas for entertaining special guests.

Ingredients

  • 100g caster sugar
  • 125ml golden or dark rum
  • 2-4 madeleines
  • scoop of crème fraîche or whipped cream to serve

Method

  • STEP 1

    Put 75ml of water and the caster sugar into a small pan, and bring to a simmer, swirling the pan at the start to help the sugar dissolve.

  • STEP 2

    Bring to a boil and bubble for 5 mins to make the syrup a little thicker, then add the rum off the heat. Chill the syrup.

  • STEP 3

    Arrange the madeleines in small bowls or glasses and, when you are ready to serve, pour over a good dose of the syrup, leaving to soak for a minute or two.

  • STEP 4

    Serve each with a scoop of crème fraîche or whipped cream.
