Spray a standard-sized ramekin with cooking spray.
In a medium-sized bowl, whisk together the milk, applesauce, egg white, and extracts.
Add the coconut flour, baking powder, sweetener, and salt, then whisk until fully incorporated.
Gently fold in the confetti.
Scoop batter in the ramekin and microwave for ~3 minutes. Let cool slightly, then enjoy!
Recipe Notes
**For a vegan version, substitute the egg white for ½ tbs Ground Flaxseed and increase the Unsweetened Vanilla Almond Milk to ¼ cup.
