Here’s a recipe for a classic carrot cake with cream cheese frosting:

 

Carrot Cake Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)

Cream Cheese Frosting Ingredients:

 

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

 

Instructions:

 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Stir in the grated carrots, crushed pineapple, and chopped nuts (if using) until evenly distributed in the batter.

  6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  8. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

  9. While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.

  10. Gradually add the powdered sugar, 1 cup at a time, beating well after each addition. Add the vanilla extract and beat until the frosting is smooth and fluffy.

  11. Once the cakes are completely cooled, frost the top of one cake layer with a generous amount of cream cheese frosting. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

  12. Optionally, decorate the top of the cake with chopped nuts or grated carrots for garnish.
